On these single-varietals, we seek the expression of the typicity of each grape, of the fruit, the freshness and the complexity ; just by the richness of the grape harvest and the quality of the terroirs

Our Merlot is fresh, smooth with notes of strawberries and aromatic plants.

Le Viognier, originaire, du nord de la région du Rhône est un cépage de très haute qualité. Il produit des vins extrêmement puissants et corsés avec des senteurs florales en filigrane. Les rendements sont généralement assez faibles avec ce cépage.

Pour le Viognier de l'Herbe Sainte, les raisins sont égrappés mécaniquement (c'est-à-dire que les baies sont arrachées des rafles). Les baies sont immédiatement pressées à basse pression et le moût est immédiatement refroidi. La fermentation a lieu à basse température dans des cuves en acier inoxydable à température contrôlée.

The Syrah expresses itself on blackcurrant, spices and black pepper.

This Charentan grape variety, Colombard, is planted on "Herbe Sainte", a filtering, draining terroir with an East-West exposure. Usually used in blends, we sell it as a single variety because its vivacity allows us to offer this wine with seafood.

The IGP Pays d'Oc white Colombard 2019, with floral notes, combines smoothness and structure, complex, with a soft ending.… »

For the Cuvées Divine Étoile Blanc and Rosé, we have chosen the traditional method of taking the foam in the bottle.

The grape varieties of our Burgundian origins, Chardonnay (for the White) and Pinot Noir (for the Rosé) allow us to obtain two festive, aromatic, fruity wines with a beautiful acidity.

As a fine bubbles lover, we leave the bottles on laths for 12 months so that the bubbles integrate better with the wine. Serve between 8 and 10°C.

Exposed East-West on the "Herbe Sainte" terroir which is rather filtering, draining and fresh soil, the Sauvignon develops flavour of exotic fruits and a freshness touch. Not very large in amounts, it’s often blended with other grape varieties, but we wanted to offer it as a single variety for its particular expression.
